About the Bottle

Sullivans Cove American Oak ex Bourbon Single Cask is our most awarded expression and is overall the most award-winning Australian whisky ever. Aged in 200L American oak casks previously used to mature bourbon in the USA, this whisky represents the defining style of Sullivans Cove, with a strong malt backbone and flavours of vanilla, caramel, stone fruit, white flowers and powerful oak. As a single cask bottling, every release is different, expressing the unique characteristics of each barrel.

Nose

A gentle, slow filling into the nose, like the Bridgewater Jerry fog on the River Derwent. Fruity: peach, pineapple, green apple, banana leaf, with a nice floral rose petal note on top. There’s an earthy spice like paprika in the mid section, with Horlicks and caramel toffee. Deeper still there are tobacco, licorice, biscuits, jam and coconut.

Palate

Transition through to the palate is with ease; texture is gently gripping and waxy. Initial burst of mango, lychee, and ruby grapefruit. A sweetness swells, and with it a space of fruit and confection: lychee, banana paddlepop, strawberry jam, guava, melon. This continues and then deepens, with some date, rich vanilla and a hint of balsamic.

Finish

The finish begins with a long burst of lime, lychee and melons, backed up by coconut and chocolate wafer biscuits. This ‘mid-finish’ is lengthy, and finally fades into a wave of juiciness, bananas and chocolate milk. A lasting, nicely waxy texture leaves a very pleasant light coating in the mouth, keeping the dream alive!
