The Sydney suburb of Rosebery is home to Archie Rose. Founded in 2014 by Will Edwards, Archie Rose produces a variety of spirits but are best known for their Whisky and Gin- winning awards for the Best Australian Single Malt (2019) and the World’s Best Rye Whisky (2020).
Whether it’s for a drink at their bar or one of the whisky & gin experiences, the Rosebery Cellar Door is worth a visit. Located amongst good company on the same block as Three Blue Ducks & Black Star Pastry, and across the road from Gelato Messina.
In 2020, production moved to a larger facility further out of the city in Banksmeadow. Using predominantly Australian grown grains, master distiller Dave Withers pushes the boundaries of traditional Whisky production techniques focusing on maximising flavour in the spirit before aging. Typical Single Malt Whiskies are distilled from a mash bill of just one or two types of malted grains. Taking inspiration from Aussie craft brewers, Archie Rose uses up to six specialty malts in their new make spirit- leading to a more complex spirit that relies less on the barrel for flavour.
